RECIPE: CHILLED CUCUMBER MINT SOUP

With the haze abound and suffocating humidity leaving our bodies parched, we thought we’d share a little recipe that can rehydrate you and leave you feeling just a little bit more refreshed. No matter if you’re stuck indoors this weekend or feeling lethargic and really need a refreshing boost, give this amazing chilled cucumber mint soup a try!

Cucumbers have long been known for their restorative and hydrating benefits to your body, skin and mind. Containing 95% water content and loaded with vitamins, cucumbers have been sidelined for far too long. Here are some of the vitamins that can be found in cucumbers: Thiamine (Vitamin B1), Riboflavin (Vitamin B2), Nicatin (Vitamin B3), Vitamin B6, Folic Acid, Calcium, Iron, Potassium, Zinc, Magnesium and Phosphorous, etc.

 

Serves 1-2 bowls 

Ingredients

1 large cucumber

1/4 cup plain yoghurt

1/4 cup low fat milk

1/2 lemon

5 mint leaves (add a couple more for garnish)

salt and paper (to taste)

1/2 cup water

 

Instructions

1. Peel, deseed and dice up cucumber into cubes. Deseed and gently squeeze the juice of half a lemon.

2. In a blender, blend all the ingredients except for the water until smooth.

3. Use water in small amounts to tamper with the consistency according to your preferences. (Some prefer not to add it at all)

4. Chill in the fridge for 2hrs, garnish with mint leaves and serve.
