RECIPE: CORN DIP WITH TOMATOES AND BASIL

Here’s an appetiser that is low in saturated fat, cholesterol-free and yummy all at the same time!

Ingredients

1 3/4 cup Fresh Corn kernels or Frozen corn
1/3 cup Milk
1/3 cup Toufu
1 Tbs Fresh lime juice
1/4 Tsp Salt
8 Diced cherry tomatoes
1/3 cup Fresh basil leaves
3 cups Baked white-corn chips

Instructions: 

1. Cook corn and milk in a pot over medium heat until corn is tender, 7 to 9 minutes. Let cool completely.

2. Mash 2/3 cup corn mixture, the tofu, lime juice, and salt in a food processor; season with pepper.

3. Transfer to a serving bowl, and stir in remaining corn mixture, the tomatoes, and basil. Serve with chips.
